Linda aka @flavor_explosions has been a fan of RFF’s farm produce ever since she saw a Radical Family Farms post on Tong Ho, a childhood favorite. Linda is a cooking instructor focusing on East and SE Asian cuisines.  She teaches at 18 Reasons and Civic Kitchen in San Francisco and Milk Street Kitchen in Boston.  During the pandemic, she partnered with RFF to teach our customers how to cook with our produce.  She’s also an advisory board member of the Good Food Foundation.  Her work is focused on the intersection of sustainability, equity and food.

ABOUT DUO JIAO: The Duo Jiao is a spicy fermented chopped chili condiment popular in Southern China, and a staple on every Hunanese table.  It is deeply umami, aromatic, spicy hot with a little tang.  Every family has its own recipe, and this recipe is inspired by Linda’s friend Wu Lan’s aunty who lives in the Hunanese countryside.  We use Radical Family Farms Er Jing Tiao chilies which have fruity and floral notes, and added douchi salt fermented black soybeans, a magical ingredient, lending flavor and funk while being a fermentation catalyst.   

WHAT IS THE FLAVOR PROFILE?  Deeply umami, savory, salty and spicy.  Slightly tangy.  Aromatic and fruity.    

WHAT IS THE SPICE LEVEL? We rated it as  🌶️ 🌶️ 🌶️  or a Scoville scale of HOT..  A similar chili in this category is cayenne and tabasco.   Once you eat it with food, the heat level is perfect!

IS THE JAR SHELF STABLE? Yes, but only while unopened. Keep refrigerated after opening.

HOW LONG WILL IT KEEP FOR?  Six months unopened, and best eaten a month after opening with refrigeration.  The product is lacto-fermented prior to steam pasteurization, and does not contain any preservatives.  

IS IT VEGAN AND GLUTEN FREE? The sauce is vegan.  The sauce is not gluten free.  The traditional recipe uses a fermented sorghum distilled liquor for flavor and for natural preservation.  Wheat is included in the mash in sorghum fermentation.

WHAT CAN I USE IT ON? Everything. The Duo Jiao is a condiment you can enjoy on any food anytime you need a zing and a kick!  It can also be used as a cook’s hack.   You can spoon a couple tablespoons of Duo Jiao over fish prior to steaming, or stir fry proteins and vegetables with some Duo Jiao.
