RFF had been partnering with C-Y and Shane at Lion Dance Cafe in Oakland as a CSA host for many years while the CSA was up and running. I’m delighted to collaborate with them on a chili product near and dear to my heart (and stomach). This is a very limited run of Eight Treasurers Chili Crisp, a recipe developed by C-Y and Shane, the “Authentic, not Traditional” Italo-Chinese-Singaporean, award-winning, vegan chefs. 3 of the 8 ingredients feature RFF certified organic Chinese chili peppers.

We already knew Leslie for her work with east Asian heritage produce at Radical Family Farms in Sebastopol, and had hosted her CSA boxes when the restaurant was running. So when she reached out to partner on a product highlighting the qualities of her certified organic chilies, it was an instant yes!

WHAT ARE THE CHILIES? Radical Family Farms’ certified organic 四川 Sìchuān, 二荆条 Èr jīngtiáo, and 小米辣 Xiaomi la, all with distinct flavors and varying levels of heat for a balanced result. All grown personally by Leslie, and hand stemmed and chopped by us. A labor of love!

WHAT ARE THE EIGHT TREASURES? The three chilies, our preserved kohlrabi (sourced from Yang farm) and our smoked fermented douchi (black soybeans) for umami and depth, fried peanuts and organic Hodo tofu for added textures, and alliums (garlic and shallots) for aroma and natural sweetness. Ingredients crafted with care and time, and rooted in tradition, brought together for this “Authentic, not Traditional” chili crisp.

IS THE JAR SHELF STABLE? Yes, but only while unopened. Keep refrigerated after opening.

HOW LONG WILL IT KEEP FOR? A long time unopened, and a long time after opening if properly refrigerated. However it is best enjoyed fresh, as the aspect, flavor and texture may deteriorate over time, like with any artisanal, preservative-free food product.

IS IT VEGAN AND GLUTEN FREE? Everything we do is vegan. While there are no gluten-containing ingredients used in the making of this chili crisp, our kitchen also stores wheat and we make bread and seitan regularly, so it is not a gluten-free environment.

WHAT CAN I USE IT ON? Everything. Add crunch and a kick to your roasted vegetables, instant noodles, tofu dishes, fried rice, mashed potatoes, tacos (like a salsa macha), salads (as a topping or stirred into the dressing), nachos, guacamole and dips, soups, dumplings, vegan nuggets, corn on the cob, ice cream sundaes… Your imagination is the limit!
